The Sap Sucker

1.5oz Berkshire Mountain Distiller’s Rye
Whiskey .75oz MoonCloud House Punsch
.5oz Amaro Lucano (or any nice bold, bitter amaro; not fernet)
1oz Fresh Squeezed Lemon juice
.75oz Turner Farms Maple Syrup (Syrup, see below)
2 dashes Angostura Bitters

Combine all ingredients in a Metal shaker tin, add ice and shake vigorously. Double strain through a fine mesh strainer into your favorite cocktail glass, or over one large ice cube in a rocks glass.

Maple Syrup “Syrup”:
Combine in a plastic quart container, or non-reactive glass jar,
1cup Maple Syrup
1cup piping hot water

Stir until fully incorporated. This helps the solubility of the maple to more silky, balanced cocktail.

1.25oz Berkshire Mountain Distiller’s Ethereal Gin
1.25oz Bully Boy Cooperative Rum
.75oz Cocchi Rosa
.5oz Cocchi Barolo Chinato
.25oz St. Elizabeth Allspice
Dram .25oz MoonCloud Vanilla Syrup

Combine all ingredients in a Flat Bottom Paddle stirring glass, add ice and stir for 40 rotations. Strain into your favorite cocktail glass, or over one large ice cube in a rocks glass.

Technique: The approach to stirring your drink in such a specific style glass is to carefully pass the ice through the spirited mix and avoid sloshing the ice too much. The goal is to both chill and dilute at a appropriate ratio, without underselling the importance of the dilution. Don’t forget that water is always a key ingredient to every cocktail as it helps deliver the balance to the drink as a whole.

For this drink a Nick & Nora Glass works beautifully.

Hot & Trottin’ Toddy

1.25oz Pierre Ferrand Cognac Ambre (or your favorite cognac or armagnac)
1oz Morin Calvados (or your favorite Apple Brandy)
.75oz Mill River Honey Syrup (Instruction Below)
1oz fresh squeezed lemon juice
.25oz St. Elizabeth Allspice Dram

*You’ll also need*

A kettle of hot water at the edge of boil
One Fresh Whole Nutmeg & One Cinnamon Stick

In the building of this drink it is important to preheat your mugs and mixing tins with hot water before combining ingredients. This will ensure a “Hot” Toddy and not a warm-ish Toddy, not to mention Trottin’.

Combine all ingredients into a preheated mixing glass or tin.
*Do Not Use a flat bottomed paddle glass for this drink.

Add about 2oz Boiling water and stir well with an almost whipping motion at the bottom of the vessel to fully incorporate. Pour into preheated mug and add hot water to fill. Freshly grate 6-8 scrapes of a cinnamon stick and 4-6 scrapes from a whole nutmeg with a microplane onto the top for garnish and serve with an extra lemon wedge on the side.
